Sancerre Blanc

Mainly planted on chalky stony soils, our white Sancerre is very typical: dry, fruity  and  concentrated, full-bodied in mouth. To optimise fruit flavours, yields are reduced on our plots of sauvignon, then after the  harvest, the wine is matured on its lees until February. Several successive tastings determine the best time for the bottling.

Sancerre Rouge

18 days of fermentation are necessary to obtain a fleshy and fruity product with structure.

The wine will spend a year in oak barrels coming from the Tronçais forest  making it well-rounded and refined.

The wine is then slightly filtered and bottled. And can be drunk within six years

Sancerre Rosé

Our rosé is obtained by the so called “saignée” method in which the grapes are left in contact with the skins for a few hours so that the wines gets its pink colour.

Fermentation is then carried out in the same way as for white wine under controlled temperature.

Many tastings are necessary to choose the best period .to filter and bottle the wine.

Sancerre Cuvée Pauline

 

The "cuvée Pauline"  is  produced  with  old  vines  which  yields  were  voluntarily reduced. This  cuvée  is  matured  10 months in  oak and acacia barrels on its lees, giving the wine its particular flavour.
It can age from 5 to 7 years.

Powerful wine, very
rich, almond flavour,
with light Vanilla aroma

Domaine Curot

Nearby the "Celliers de la Pauline" stands the cellar of the "Domaine Curot" runned by Eric's sister with the help of his brother. The domain spreads over 23 acres.
